Abstract A Belgian programme to increase the economic value of different apple cultivars for processing is described. Selection criteria for cultivar choice are briefly outlined for the production of apple juice and cider, compote, and bakery products. Field studies have been carried out since 1989 to evaluate cultivars for apple juice and cider production. Different apple juices were analysed during 1995-97 for sugar contents, acidity and pH. Criteria for sensory analysis of 19 cultivars, including 2 for apple juice and 7 for cider, are also described.
