Abstract In order to preserve its know-how, the belgian beer culture joined in 2016 the UNESCO representative list of the intangible cultural heritage of humanity. Despite this recognition, our beers are they still really Belgian? Indeed, despite the increasing production of malts, malting barley production decreases over time. As special craft beers are becoming more and more popular in Belgium, a growing interest in local productions is observed. Therefore, the development of a malting barley sector is generating a new interest for many people in the brewing industry. This thesis goes directly into the development of this "malting barley" sector. The objective is to offer an experimental database which will allow a better identification of the barley varieties and growing conditions that are best suited to our territory. The results obtained are discussed and compared to the criteria used in the brewing industry to evaluate the quality of malts produced in the context of a local culture of barley. We will see that it is conceivable from an analytical point of view to develop a local malting barley sector in our territory. However, this will only be possible if all the actors in the sector, from the farmer to the consumer, are fully invested in this project, which seems to be more and more the tendency in Wallonia.
