Abstract The aim of this work is to study the possible discrimination of olive oil samples according to their Designation of Origin (DO) as quality label as well as the country (and region) of origin. For this reason, a comparison of the performance of different supervised discrimination methods based on the Raman data of the olive oil samples has been performed. The aim of the supervised classification methods is to develop classification rules. Representative samples of each group (known beforehand) are available, from which the relevant characteristics (the DO, the country, the region,?) were known. Based on these data, classification rules are determined, which can then be applied to classify new (unknown) samples. The data set consists on 250 samples of olive oil measured with a FT-Raman spectrometer at 3402 wavenumbers. The samples are coming from five different origins: France, Greece, Italy, Spain and Turkey. For each country different regions are represented in the data set as well as different DO and olive variety and cultivars. The first part of this work consists mainly in data investigation, which is performed on the data set based on plots of the Latent Variables and predictions obtained using a PLS-DA. The first results of this study has shown that the different countries have a tendency to cluster independently, that is a first indication that a possible separation between countries is possible. In the same study, several discrimination techniques have been applied in order to find a clear distinction not only between countries and regions but also between the different DO and cultivars presented in the samples.
