Lipid analysis with gas chromatography

Context

For many years, the attention for lipids group has been increasing in many fields in Food sciences as, nutrition, dietetic, food technology, health science, traceability,... All these fields require more and more detailed knowledge on lipid composition. Gas chromatography has been a recognized method for many years for lipid analysis. Many works were performed in the past in the CRA-W, in particular, works allowing to study the fatty acid profile of milk fat. These studies permitted to lay the foundations of a new and very popular product: easy to spread butter. For a short time, the CRA-W has been working again on chromatography methods to adapt them to new problematics, like omega 3 and 6, trans and cis, or CLA isomer separations. On the other hand, the department also works on a method for triglycerid separation.

Objectives

To develop different methods of lipid analysis by using gas chromatography.

Expected results

Development of a glyceroltriheptanoate (GTH) detection method for marking and detecting animal products produced from category 1 and 2 material.

Results obtained

- Detailed fatty acid profiles of different dairy products, meats of different origins, oils, feeds, ... - Triglycerids profiles of cocoa butter.
