Abstract Current food systems are submitted to new constraints and must face new challenges in terms of productivity, environment and health. In spite of the existence of alternative production systems able to reduce negative externalities, few changes happen. In this article, it is shown that agricultural systems suffer from a socio-technical lock-in effect. In this context, the concept of ecosystem services, thanks to its holistic approach, is able to better take into account all the positive and negative impacts produced by agriculture. Indeed, this concept of which the central paradigm is human wellbeing, includes all costs and benefits, whether they have a market value or not. The implementation of this concept could lead, in the long run, to the objectivization of prices and to the evolution of agricultural practices according to their impacts on the environment, on one hand, and to make all the stakeholders aware of their relationship between the natural capital and their own well-being.
